Picky Eaters

Most people who know me, know I don't eat vegetables and fruit freely. I always cook these items for Robert as he is a great eater! Jack like most kids is pretty particular about what he eats. We can not get him to eat any fruit or veggies so it is a struggle to find things that are good for him. I took a recipe from Deceptively Delicious for her meatball soup and altered it a few times to get it right for our family. Jack will eat it straight for a week! Robert and I both like it to so it is a great balance for everyone. Below is the recipe Robert and I put together, we both recommend ground turkey for the meatballs instead of the hamburger but use what you have on hand.
Meatball Soup
Ingredients:

1/2 lb Ground Turkey
1 Egg

1/2 cup Bread Crumbs (or crushed croutons)
3 cup Penne Noodles (or other)

1/3 White Onion
3 cloves Garlic
1 stock Celery
1 floret Broccoli
1 cup Carrots

3 cup Beef Stock
3 cup Chicken Stock
15 oz (1 can) Tomato Sauce
2 Tbsp Butter

1/4 tsp Paprika
1/4 tsp Garlic Powder
1/4 cup Parmesan Cheese
1 tsp Pepper
1/2 tsp Garlic Salt
1 Chicken Bullion Cube

Instructions:
Saute diced Onions, Garlic, Celery, and Butter in separate pan. Steam Broccoli and Carrots until soft. Blend and liquefy all sauteed and steamed vegetables with Chicken Stock. Combine Tomato Sauce, Beef Stock, and blended mixture in a Stock Pot on low heat. Combine (mix) Ground Turkey, Egg, Bread Crumbs, Paprika, Garlic Powder, and Parmesan Cheese in bowl. Make 1 Tbsp size Meatballs and place on baking sheet at 400 degrees Fahrenheit for 15 minutes, or until golden brown. Add Meatballs to Stock Pot. Add noodles and increase temperature to a low boil. Cook until noodles soften. Season to taste (Pepper, Garlic Salt, Chicken Bullion Cube). Ready to serve!
